Baked Quinoa Pudding

This warm pudding is a satisfying dessert that's made with the goodness of whole grain quinoa, and Lactantia® Lactose Free 2% Milk, and Lactantia® Lactose Free 35% Whipping Cream. A dollop of fresh whipped cream adds the perfect finishing touch.

Ingredients

  • 2 cups quinoa, cooked
  • 2 cups Lactantia® Lactose Free 2% milk
  • 1 cup Lactantia® Lactose Free 35% cream
  • ¼ cup sugar
  • 2 ripe bananas, mushed up
  • 2 tbsp rum
  • 2 tbsp honey
  • ½ cup raisins
  • 2 tsp cinnamon
  • ¼ cup sugar
  • 4 eggs
  • Pinch of salt
  • Cooking spray as needed

Instructions

  1. Preheat the oven to 325°F.
  2. In a large bowl, whisk together the eggs, honey, sugar, salt, Lactantia® Lactose Free Milk and Lactantia® Lactose Free 35% Whipping Cream.
  3. Add the banana, the rum, the quinoa, and mix well.
  4. Spray a 7” x 11” pan with cooking spray, then fill with the quinoa mixture..
  5. Place the baking dish inside a larger baking dish or roasting pan. Fill the larger dish halfway with hot water.
  6. Bake in the oven for 1 hour until the center is set. Remove from oven and let cool for 20 minutes before serving.

*If you prefer to use an 8×8 pan, adjust cooking time to 90 minutes.
