No-Bake Pumpkin Pie

  1. In a medium saucepan, whisk together the eggs, Lactantia 10% Half & Half, gelatin, nutmeg, ginger, and cinnamon until fully combined.
  2. Cook over medium heat, stirring constantly, for about 10 minutes, until the mixture thickens.
  3. Remove from heat and stir in the sugar and pumpkin purée until smooth.
  4. Pour the mixture into the premade graham cracker crust.
  5. Chill in the refrigerator for 5–6 hours, or until fully set.
