Creamy Tortellini Soup

  1. In a large saucepan, heat olive oil and butter over medium heat.
  2. Add onion and garlic, cooking until translucent. Stir in flour and cook for 1 minute.
  3. Stir in vegetable broth, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a low boil and simmer for 10 minutes.
  4. Add tortellini and cook for 5 minutes, until tender. Remove from heat.
  5. Stir in spinach, Parmesan cheese, and Lactantia Lactose-Free 2% milk until creamy and well combined.
  6. Divide among 4 bowls. Garnish with fresh basil, extra Parmesan, and a sprinkle of red pepper flakes if desired.
